Honey Sriracha Mahi Mahi
Mahi Mahi, known as dorado here in Central America, is a very common catch along the Pacific Coast and is considered one of the best fish to cook here in Costa Rica. It’s arguably the most well-known pelagic game fish worldwide as it inhabits every tropical ocean on Earth. Its meat is usually white-pink and beige and it has a smooth pronounced flavor. If you have darker portions or bloodlines they can be trimmed to reduce that “fishiness” taste on your dish.

Prep Time: 10 Minutes / Cooking Time: 25 minutes / Skill Level: Super easy!
For the Fish:
2 Lbs of freshly caught Mahi Mahi (diced in cubes)
¼ cup of Cornstarch
For the Sauce:
1 Cup of Water
2 Tablespoons Sriracha Sauce (this will depend on how spicy you want it)
6 Tablespoons of Soy Sauce
¼ of Brown sugar or Molasses
1 Tablespoon of Minced Garlic
2 Tablespoons of Honey
2 Tablespoons of Cornstarch mixed in 2 tablespoons of water.
- In a small saucepan, combine all the sauce ingredients except the cornstarch and boil over medium heat.
- Next combine the 2 tablespoons of water and cornstarch and whisk it into the mixture until it gets thick. Reduce heat to low.
- Coat the dorado with the mixture. In a large sized pan drizzled with olive oil over medium heat, lightly cook your dorado until all the meat is white – but be careful not to overcook it. Then add the sauce and stir. (You can add steamed broccoli or other veggies into the mixture).
- Sprinkle with sesame seeds and serve over warm rice!
